The Team Behind the Experience


Colin Wyatt returned to Maine after twelve years working in New York’s DANIEL and Eleven Madison Park, where he led the team awarded the accolade of “The World’s Best Restaurant” in 2017. A veteran Portland chef, the natural beauty, vibrant culture, and passion of Maine’s growers and creatives ultimately called him back to open the doors of Twelve. “Maine has always been a place I wanted to return to. As beautiful as it is, I think it’s the people that attract everyone to the state. This is why I came back and why I wanted to start this restaurant. Twelve is a way for us to be a part of this community and hopefully, add our own voice to it.”

Hannah's passion for cooking began early, nurtured by family dinners that emphasized the importance of good food and togetherness. After moving to New York to attend culinary school, she honed her skills at Cafe Boulud and later, Aquavit. Building on her experience, Hannah returned to Maine with stints at Evo and Chebeague Island Inn before stepping into her current role at Twelve. Leading the kitchen at Twelve, she combines culinary tradition with a commitment to creating exceptional dining experiences, all while fostering a collaborative and innovative environment for her team.

David Albright joins Twelve and Prentice Hospitality Group as General Manager, bringing more than 15 years of hospitality experience. He spent many of those years in New York City, including serving as Service Manager and Sommelier at Marc Forgione. Most recently, he led the locally acclaimed Novella Osteria in his hometown of Columbus, Ohio. Introduced to southern Maine by his wife, David is excited to call Portland home and looks forward to contributing to the city’s vibrant food and beverage community at Twelve.

Hayley Hastings | Assistant General Manager


Hayley Hastings brings heart, warmth, and a true sense of place to every hospitality experience. Raised in Portland, Maine, she got her start in the floral industry before spending several formative years at Five Fifty-Five, one of the restaurants that helped shape Portland’s culinary scene. After gaining experience in Oregon, Massachusetts, and New York, she returned home to Maine, where she champions sustainable agriculture and independent farms. For Hayley, food is a powerful way to connect people, share stories, and build community.

Jenn is a Portland native with nearly 20 years in the city’s restaurant scene. She discovered her love for hospitality while studying vocal and piano performance at the University of Southern Maine and developed a deep passion for classic cocktails and wine through her time at Lolita Vinoteca + Asador. Jenn is a Certified Sommelier with the Court of Master Sommeliers, holds the WSET Level 3 Advanced Award in Wines, and has a degree in Hospitality Management. As Twelve’s sommelier, she curates dynamic, personalized wine experiences for both locals and visitors, while continuing her pursuit of Advanced certification.

Past Meets Present

Past meets present within the storied walls of this 150-year-old brick building, formerly known as “Building 12: Pattern Storehouse”. In 2022, the structure was carefully mapped out and rebuilt brick-by-brick in its current location on the Portland waterfront, becoming the home of Twelve.
